Its first major project is the Kigali Golf Resort & Villas, featuring a golf course designed by renowned golf course designer Gary Player, together with a five-star clubhouse and other hospitality amenities.
Job Overview
The Chief Steward will lead the daily stewarding operation across kitchens, restaurants, bars, banquet facilities, and employee dining areas.
The role has a strong focus on food safety, hygiene, HACCP compliance, sanitation, inventory control, cost management, waste reduction, and team leadership.
The successful candidate will also act as the resort’s Food Safety and Hygiene Officer and ensure compliance with applicable health regulations, HACCP requirements, and luxury hospitality standards.
Key Responsibilities
Stewarding Operations
The Chief Steward will:
- Lead and manage daily stewarding operations.
- Oversee stewarding activities across kitchens, restaurants, bars, banquet facilities, and employee dining areas.
- Ensure continuous availability of clean kitchen equipment and utensils.
- Maintain adequate supplies of chinaware, glassware, silverware, and cooking equipment.
- Develop stewarding schedules according to operational requirements.
- Maintain cleanliness of kitchens and storage areas.
- Maintain garbage areas and loading docks.
- Ensure back-of-house facilities remain clean.
- Ensure dishwashing equipment is properly maintained.
- Monitor steward productivity.
- Monitor stewarding labour costs.
- Conduct daily inspections of stewarding areas.
Food Safety and Hygiene
Responsibilities include:
- Act as the resort’s Food Safety and Hygiene Officer.
- Develop and implement HACCP-based food safety systems.
- Monitor HACCP compliance.
- Conduct daily hygiene inspections.
- Monitor food storage temperatures.
- Monitor cooling procedures.
- Ensure appropriate thawing methods are followed.
- Monitor hot holding procedures.
- Ensure proper cleaning and sanitization.
- Monitor pest control programmes.
- Work with external pest-control contractors.
- Ensure compliance with local health regulations.
- Ensure compliance with brand standards.
- Investigate food safety incidents.
- Implement corrective actions when required.
Compliance and Audits
The Chief Steward will:
- Prepare the resort for internal hygiene audits.
- Prepare for brand audits.
- Prepare for government hygiene inspections.
- Maintain HACCP documentation.
- Maintain food safety records.
- Conduct regular food safety risk assessments.
- Lead corrective action plans following audit findings.
- Ensure compliance with ISO, HACCP, and applicable brand food safety standards.
Training and Staff Development
Responsibilities include:
- Provide food safety and hygiene induction training to new employees.
- Conduct refresher training on HACCP.
- Train staff on personal hygiene.
- Provide allergen-awareness training.
- Train staff on chemical handling.
- Provide sanitation training.
- Coach supervisors and department heads on food safety practices.
- Promote a strong food safety culture throughout the resort.
Chemical and Sanitation Management
The successful candidate will:
- Manage cleaning chemicals.
- Ensure chemicals are safely stored.
- Ensure cleaning products are used correctly.
- Maintain Safety Data Sheets (SDS/MSDS).
- Ensure proper dilution of cleaning products.
- Monitor chemical consumption.
- Control chemical-related costs.
- Liaise with chemical suppliers regarding equipment maintenance and training.
Inventory and Asset Control
Responsibilities include:
- Manage operating equipment inventories.
- Manage stewarding supplies.
- Conduct monthly stock counts.
- Monitor chinaware, glassware, silverware, and kitchen utensils.
- Control equipment breakages.
- Train staff to reduce breakages.
- Recommend equipment replacement when necessary.
- Recommend capital expenditure requirements.
- Maintain appropriate par stock levels.
Waste Management and Sustainability
The Chief Steward will:
- Implement waste segregation programmes.
- Implement recycling programmes.
- Monitor food waste.
- Support waste-reduction initiatives.
- Ensure environmentally responsible waste disposal.
- Support sustainability initiatives.
- Support ESG initiatives within the resort.
Leadership and Team Management

Required Qualifications

- Train-the-Trainer certification is preferred.
- IOSH or OSHA safety certification is an advantage.
Required Experience
Candidates should have:
- Minimum 5–7 years of experience in stewarding operations.
- At least 2–3 years of leadership experience in a luxury five-star hotel or resort.
- Proven experience managing HACCP systems.
- Experience conducting hygiene audits.
- Experience with large banquet operations.
- Experience working across multiple food outlets.

- HACCP Level 3 or equivalent certification.
